Clear a flat, well-lit surface and lay a soft cloth under your violin to protect the finish. Loosen the old string completely by turning the peg counterclockwise (for right-side pegs) until slack.
Detach the ball end or loop from the tailpiece by unscrewing the fine tuner (if present) or gently pulling. Cut the string near the peg with cutters if coiled tightly. Success: String fully removed without scratching varnish.
